Funfetti Cake Cookies

I was never that big of a fan of “lifehack” videos.  And then I randomly stumbled across this video. While the concept of cake mix cookies wasn’t foreign to me, using cream cheese to make them was.  I’ve made these the past two years I’ve done Cookie Brigade since the cost/yield ratio is outstanding, especially if you’re buying ingredients at Winco (praise be our 98 cent cake mix overlords).

  • 1 box Funfetti cake mix
  • 4 oz softened cream cheese
  • 1/4 cup softened butter
  • 1 egg


  • Preheat oven to 350 degrees.
  • Using stand mixer or hand mixer, cream the cream cheese until smooth.
  • Add egg and mix until incorporated.  Add butter and mix until homogeneous (you really don’t have to do this, it just makes it so that there aren’t any errant cream cheese lumps in the dough).
  • Add in cake mix and mix by hand.
  • Roll into tablespoon sized balls and bake on a parchment-lined baking sheet for 8-12 minutes.


It is INCREDIBLY easy to overcook cake mix cookies.  Even if they still feel doughy, if they’re golden brown on the bottom, just take them out, they’ll firm up as they cool.
